  1. For the salted squid sambal, soak 350 g of salted squid in warm water, then clean it.
  2. Prepare 15 shallots, 10 cloves of garlic, 40 red curly chillies, and 10 bird's eye chillies to suit how spicy you like it.
  3. Prepare 3 kaffir limes to give the sambal a fragrant aroma.
  4. Prepare 3 bay leaves.
  5. Prepare 3 kaffir lime leaves with the centre rib removed so they smell better.
  6. Prepare 1 tsp shrimp paste, 1 tsp pepper, 1 tsp salt, and 1 tsp mushroom stock powder.
  7. Prepare 4 tbsp lime juice so the sambal tastes fresh and 1 tbsp sugar to balance the flavour.
  8. Cut the squid to whatever size you like.
  9. Grind the bird's eye chillies, red curly chillies, shallots, and garlic, but not too fine so there is still some texture.
  10. Heat a wok, add oil, then fry the squid just until it changes colour and not any longer so it does not turn tough, and cover the wok if the oil spits.
  11. Lift the squid out and drain it.
  12. Add a little more oil to the same wok to saute the spice paste, since the wok still carries the aroma of the salted squid.
  13. Add the bay leaves, kaffir lime leaves, and shrimp paste, then stir and saute until fragrant.
  14. Once the spices are cooked and fragrant, add the fried squid, then season it with the remaining ingredients.
  15. Stir fry until the seasoning soaks into the squid, then take it off the heat.
  16. For the nasi liwet, prepare 1.2 kg of rice that has been washed and drained.
  17. Bruise 4 stalks of lemongrass.
  18. Slice 8 cloves of garlic and 16 shallots.
  19. Prepare 5 bay leaves and 5 kaffir lime leaves.
  20. Bruise about 3 cm of galangal.
  21. Prepare enough cooking oil and 100 ml of thick coconut milk.
  22. Soak 100 g of Medan anchovies in warm water, dry them, then fry them.
  23. Prepare 1 tsp pepper, 1 tsp mushroom stock powder, and 1 1/2 tsp salt.
  24. Prepare 1200 ml of water for cooking the rice.
  25. Heat a wok, add enough cooking oil, then saute all the aromatics until fragrant and turn off the heat.
  26. Prepare a rice cooker and add the washed rice along with the aromatics you just sauteed.
  27. Add the salt, pepper, mushroom stock powder, and coconut milk.
  28. Add 1200 ml of water, then stir until evenly mixed.
  29. Cook the rice until done.
  30. Add the fried Medan anchovies into the rice and stir until evenly mixed through.
  31. To wrap the grilled rice parcels, prepare washed lemon basil leaves, the squid sambal, and banana leaves cut to whatever size you like.
  32. Grill the banana leaves first so they become more pliable and do not tear easily while wrapping.
  33. Take two banana leaves laid with their grain running in opposite directions so they do not tear easily.
  34. Put as much rice as you like onto the banana leaf.
  35. Add lemon basil leaves on top of the rice.
  36. Add the salted squid sambal you made earlier.
  37. Wrap it up and press it firm so it holds its shape and the rice does not spill out.
  38. Roll the leaf up, fold both ends over, then secure them with toothpicks.
  39. Grill the parcels on a nonstick pan or over a grill until the leaves char slightly so the rice turns fragrant, then take them off and serve.
