Steps were generated from the video narration. Watch the video if unsure.

  1. Mix 220 g of high protein flour with 30 g of glutinous rice flour.
  2. Add 4 g of instant yeast and stir for about 45 seconds until evenly combined.
  3. Add 35 g of sugar and 3 g of salt, then stir again.
  4. Crack 1 egg into the bowl and stir it in roughly.
  5. Pour in 115 ml of cold milk a little at a time while stirring.
  6. Carry on kneading by hand until no dry flour is left.
  7. Add 35 g of room temperature unsalted butter.
  8. Knead until the butter is fully worked in, the surface is smooth, and the dough no longer sticks to your hands.
  9. Put the dough in a bowl, cover it, and rest for 30 minutes.
  10. Weigh out 50 g pieces of dough.
  11. Round each piece with buttered hands.
  12. Cover and rest for another 15 minutes.
  13. Roll each piece into a long rope of even thickness.
  14. Twist the rope until it coils into itself and forms a twisted doughnut.
  15. Dust with flour so they do not stick and tidy up the shapes.
  16. Cover and rest for a final 20 minutes before frying.
  17. Heat oil for frying, keeping the flame moderate.
  18. Add a few doughnuts at a time and fry them slowly.
  19. Turn them over until both sides are nicely coloured.
  20. Lift them out and drain off the oil.
  21. Mix 75 g of sugar with 1 tsp of ground cinnamon.
  22. Roll the still-warm doughnuts in the cinnamon sugar until fully coated.
