  1. Mix part of the bread flour with water until combined.
  2. Cook over low heat while stirring until it becomes a thick paste like glue.
  3. Take the tangzhong off the heat, transfer it to a bowl, cover with plastic, and let it cool.
  4. Mix the remaining bread flour with instant yeast for 40 seconds to a minute.
  5. Add the sugar, milk powder, and salt, then mix briefly.
  6. Add one egg and the cooled tangzhong, then mix until combined.
  7. Pour in the cold milk slowly until a dough forms.
  8. Add the unsalted butter, mix on low, then raise to medium until the dough is smooth and elastic.
  9. Shape the dough into a ball and place it in a buttered bowl.
  10. Cover and rest for 30 minutes until risen.
  11. Weigh and divide the dough in two, rolling each while pressing out the air.
  12. Cover and rest again for 15 minutes.
  13. Roll each piece out into a long oval while pressing out the air.
  14. Flip the dough over, roll it up tightly from top to bottom, and pinch the seam closed.
  15. Repeat with the second piece, rolling and sealing every open edge.
  16. Butter a 20 by 10 cm loaf tin and set both rolls inside.
  17. Press them down so they sit snugly with no trapped air.
  18. Cover and rest for 45 minutes to an hour until the dough rises nearly to the top.
  19. Preheat the oven to 190 to 200 degrees Celsius.
  20. Put the lid on the tin and bake for 30 to 35 minutes.
  21. Take the bread out, drop the tin so it does not collapse, and cool it before slicing.
