  1. Preheat the oven to 170 C and prepare a 22 x 22 cm pan lined with paper.
  2. Crack 3 whole eggs into a bowl and add 1 extra egg yolk so the sponge is richer.
  3. Add the vanilla extract and salt and whisk briefly.
  4. Add the granulated sugar and whip until the batter is thick, aerated and leaves a trail.
  5. Sift the low protein flour and baking powder into the batter and fold it in, cutting through the middle, until combined.
  6. Take about a quarter of the batter and stir it into the melted unsalted butter until no butter is pooling.
  7. Pour that mixture back into the main batter and fold until combined, keeping the batter thick.
  8. Pour the batter into the pan and level the surface.
  9. Tap the pan on the counter to release trapped air so the sponge rises evenly without holes.
  10. Bake at 170 C for about 25 to 30 minutes until done, then let it cool completely.
  11. Soak one gelatin sheet in cold water for about 5 minutes until bloomed. If using 4 g powdered gelatin, soak it in 20 g water instead.
  12. Cook the mango puree with the granulated sugar over low heat until the sugar dissolves and it starts to boil.
  13. Turn off the heat, squeeze out the bloomed gelatin and stir it into the hot puree until dissolved.
  14. Set the mango mixture aside until it is no longer hot.
  15. Soften the room temperature cream cheese with a whisk until completely smooth.
  16. Stir half of the mango mixture into the cream cheese to bring the textures together, then add the rest and mix again.
  17. Add a little yellow food colouring if you want a more vibrant colour. This step is optional.
  18. Whip the cold whipping cream until soft and just thickened, not stiff.
  19. Fold half of the whipped cream into the mango mixture to match the textures.
  20. Pour the mango mixture back into the remaining whipped cream and fold until it becomes a smooth mousse.
  21. Cut the cooled sponge into four pieces sized to fit the 10 x 10 cm box, trimming off the crusts.
  22. Lay one sponge in the base of the box, pour over about 95 to 100 g of mango mousse, top with another sponge, then pour the remaining mousse on top and level it.
  23. Chill the dessert box in the fridge until the mousse is fully set.
  24. Dice the fresh mango into small cubes and arrange them over the set mousse.
