Sotteok Skewers and Tteokbokki

  1. Thread sausage and rice cakes alternately onto skewers.
  2. Pour 350 to 400 ml of water or dashi stock into a pan.
  3. Add 1 1/2 tbsp of brown sugar.
  4. Add 1/2 tbsp of minced garlic.
  5. Add 1 tbsp of Korean chilli powder.
  6. Add 2 tbsp of gochujang.
  7. Add 1 1/2 tbsp of soy sauce.
  8. Stir everything together and bring it to the boil.
  9. Add 1/8 tsp of salt, or more to taste.
  10. Cut the fish cake into pieces.
  11. Cut 2 stalks of spring onion to the same length as the rice cakes.
  12. Cut the sausage into two or three pieces.
  13. Once the broth boils, add the rice cakes.
  14. Add the fish cake.
  15. Add the sausage.
  16. Add the spring onion and stir.
  17. Simmer over low heat for 3 to 5 minutes until the sauce thickens and the rice cakes soften.
  18. Finish with a little sesame oil and stir it through.
  19. Heat a little oil in a pan to shallow fry the rice cake skewers.
  20. Fry the skewers, turning them until the surface dries out and crisps up.
  21. Lift out the skewers and drain them.
  22. For the basting sauce, put 2 tbsp of gochujang in a bowl.
  23. Add 2 tbsp of tomato ketchup.
  24. Add 1 tbsp of corn syrup.
  25. Add 1 tbsp of sesame oil and 1 1/2 tsp of soy sauce.
  26. Add 1 tsp of sugar and 1/2 tbsp of minced garlic.
  27. Stir everything together and heat over the lowest flame until the sugar dissolves.
  28. Turn off the heat once it starts to bubble.
  29. Brush the fried skewers with the basting sauce.
  30. Add boiled eggs to the tteokbokki.
  31. Serve the tteokbokki topped with cheese and spring onion.
