  1. Whisk the all-purpose flour, granulated sugar, salt, baking powder and baking soda together in a bowl until evenly combined.
  2. Crack one egg into the flour mixture, then pour in half of the milk first so it is easier to stir.
  3. Stir until there are no lumps, then add the remaining milk.
  4. Add the vegetable oil and the vanilla extract and stir until combined.
  5. Transfer the batter into a jug so it is easier to pour into the mould.
  6. Rest the batter for about 15 minutes so the gluten relaxes.
  7. Heat the fish shaped mould over medium low heat and brush it thinly with oil.
  8. Pour in just enough batter and spread it so it fills the whole fish shape.
  9. Put a spoonful of red bean filling in the centre.
  10. Cover the filling with more batter until it is fully covered.
  11. Close and lock the mould, then cook over low heat for about 3 minutes.
  12. Flip the mould and cook the other side for about 2 minutes, checking until it is nicely golden.
  13. Take the cakes out and snap or snip off the crisp excess batter around the edges.
