Panna Cotta with Gelatin Sheets or Powder

Open offline saves

Ingredients

Steps

  1. Cut the gelatin sheets into three pieces so they are easier to soak.
  2. Soak the gelatin sheets in ice water for about 6 to 10 minutes until they soften to a jelly-like texture, using just enough water to cover them.
  3. If you are using powdered gelatin, weigh out the same weight as the sheets you are replacing, then bloom it in room-temperature water at a ratio of one part gelatin to five parts water.
  4. Stir the powdered gelatin until even and leave it at room temperature for about 8 to 10 minutes until it absorbs the water and firms up like jelly.
  5. Heat the milk, cream, vanilla, salt and sugar until boiling.
  6. Add the squeezed-out gelatin sheets, or the firmed-up bloomed gelatin powder, and stir until dissolved.
  7. Strain the panna cotta mixture, then wait until it is no longer very hot.
  8. Pour it into serving glasses, then chill in the fridge for about three hours until set.
