  1. Blend the base spice paste: shallots, garlic, candlenut, galangal, ginger, turmeric, large red chili, ground nutmeg, and kaffir lime leaves (deveined) with a little oil.
  2. Sauté the spice paste over low heat for about 2 minutes until it changes color and turns fragrant (don't add salt yet).
  3. Mix the sautéed spice paste (once cooled) with the ground chicken.
  4. Add the dried grated coconut and instant coconut milk to the chicken mixture.
  5. Season with salt and a little sugar, then stir to combine.
  6. Knead and keep mixing until the mixture turns sticky and binds together, then taste and adjust the seasoning.
  7. Wrap the meat mixture around lemongrass stalks to form the skewers.
  8. Grill the skewers over low heat, turning occasionally, until cooked and browned.
  9. For the sambal matah: thinly slice the shallots, rub with a little salt, let sit for 10 minutes until water is released, then drain the water.
  10. Add the bird's-eye chilies, curly chilies, sliced lemongrass, sliced kaffir lime leaves, and roasted shrimp paste to the shallots.
  11. Pour hot coconut oil over the sambal mixture, then season with a little sugar.
  12. Add a squeeze of lime juice, mix well, and serve the sambal matah over the sate lilit.
