Fried Chicken Wings with Shallot Oseng

  1. Heat 4 tbsp cooking oil over medium heat.
  2. Add the 20 small shallots, stir until the aroma comes out.
  3. Add the 15 cut-up bird's-eye chilies and 2 stalks of sliced scallion, then add 1/2 tsp salt and 1/2 tsp granulated sugar.
  4. Add 1/2 tsp Ladaku ground pepper.
  5. Add 1 tsp crushed toasted shrimp paste, stir until the aroma comes out, turn off the heat, and set aside (this is the shallot oseng for topping).
  6. Season the 650 g of chicken wings with 1 packet of Desaku marinade seasoning, 2 tbsp cornstarch, 2 tbsp water, and 1/2 tbsp Ladaku ground pepper.
  7. Add 1 packet of Desaku garlic powder, cover, and shake/toss until evenly coated.
  8. Let it sit for 30 minutes so the seasoning soaks in fully.
  9. Heat cooking oil over medium heat (around 100-120°C), fry the chicken wings until golden, flipping.
  10. Remove once nicely colored.
  11. Serve with rice and egg, drizzled with the shallot oseng on top.
