Red Velvet Lapis Legit with 40 Egg Yolks

Steps

  1. Prepare a square 20x20 cm pan that is 8 cm deep, greasing only the base with butter or margarine and leaving the sides bare.
  2. Line the pan with baking paper then set it aside.
  3. Prepare 40 fresh room temperature eggs, cracking 10 at a time into a small bowl then transferring them to a large bowl so a broken yolk does not spoil all the whites.
  4. Separate the yolks from the whites one by one until finished, setting the whites aside since they are not used here.
  5. Prepare 350 g butter and 100 g margarine.
  6. Divide 300 g of caster sugar in two, mixing one half into the butter and the other into the yolks, stirring roughly so it does not fly about when mixing.
  7. Beat the yolks for 15 minutes and the butter for 10 minutes; if you only have one mixer, beat the butter first then clean the whisk so no butter is left on it.
  8. Halfway through beating the butter, stir the bottom of the bowl with a spatula then keep beating until light.
  9. Move the yolk batter that now leaves a trail into a larger bowl so it is easier to combine.
  10. Add the butter mixture in two stages then fold gently until fully combined.
  11. Sift in 1 level tablespoon of flour and add 2 tbsp condensed milk, then stir until combined.
  12. Set 370 g of batter aside in a bowl, then add 1 tsp red velvet paste and 1 level tablespoon of cocoa powder.
  13. Preheat the oven to 150 degrees Celsius with top and bottom heat for 10 minutes.
  14. Put the empty pan into the oven and heat it for 5 minutes.
  15. Move half of the plain batter into another bowl, then weigh out 90 g of batter for one layer.
  16. Take out the heated pan, stir the layer of batter until smooth, then pour it in and spread it across the whole base.
  17. Bake at 150 degrees Celsius with top and bottom heat on the lower rack for 5 minutes, rotating the pan occasionally.
  18. After 5 minutes move it to the middle rack, change to 170 degrees Celsius with top heat only, then bake until the surface is browned.
  19. For the second layer onward change to 190 degrees Celsius with top heat only on the middle rack.
  20. Stir the batter before pouring it over the first layer since the butter can settle, then spread it across the pan and bake.
  21. For every 4 plain layers, top with 2 red velvet layers using the same 90 g of batter per layer.
  22. Press any bubbled up surface with a layer cake presser, pressing lightly and not too hard.
  23. If any part bubbles up, prick or burst it before the batter dries, then level it with a light press before adding the next layer.
  24. For the last layer bake at 190 degrees Celsius with top heat on the middle rack until the surface is lightly browned or pale brown.
  25. Move it to the lower rack, change to 170 degrees Celsius with top and bottom heat, and bake until the surface is browned while rotating the pan.
  26. While it is still hot turn the cake straight out of the pan.
  27. Leave the cake upside down overnight then turn it back over the next day.
