Ingredients

Topping (to taste):

Steps

  1. Bake 50 g of sliced almonds on a baking sheet lined with baking paper at 180 degrees Celsius for about two to three minutes, then set aside.
  2. Make a stencil from a plastic sheet by tracing a circle 8 cm across with a cup, cut the hole out with a cutter or scissors, then wash it clean and wipe it dry.
  3. Put 4 egg whites and half a teaspoon of salt into a bowl, then mix on medium speed for about 30 seconds until foamy.
  4. Add 120 g of icing sugar gradually while mixing on low speed.
  5. Once all the icing sugar is in, turn the mixer to maximum and beat for about five minutes until the batter is risen, stiff, and holds a trail.
  6. Sift in 125 g of wheat flour and 2 teaspoons of milk powder, then mix again on low speed until evenly combined.
  7. Mix 130 g of melted margarine with a quarter teaspoon of vanilla, stir well, then pour it into the batter and mix again on low speed until evenly combined.
  8. Stir the batter with a spatula to make sure no margarine has settled at the bottom, until the batter is smooth and glossy.
  9. Line a baking tray with white, smooth baking paper so the batter does not stick.
  10. Place the plastic stencil on the paper, spoon in about half a tablespoon of batter, then flatten and spread it with the back of a spoon.
  11. Lift the stencil away, then scatter over grated cheese and sliced almonds to taste.
  12. Bake in a preheated oven at 125 to 140 degrees Celsius on the middle rack with top and bottom heat for 20 to 25 minutes until done.
  13. Once golden brown, take them out of the oven, lift them off the paper carefully, then let them air for about a minute so they crisp up further.
  14. Store the cookies in a tightly sealed container so they do not go soft.
