  1. Peel the radish and cut it into half moons, not too thin so it does not fall apart.
  2. Trim the ends off the onion and chop it roughly.
  3. Put the onion, radish and kombu into a pot.
  4. Pour in about 1.5 litres of water and start heating it, so the flavour is drawn out from cold.
  5. Dry toast the dried anchovies in a pan without oil until fragrant, to get rid of the fishy smell.
  6. Add the toasted anchovies to the stock once it is close to boiling.
  7. Simmer over low heat for 15 to 20 minutes.
  8. Turn off the heat and strain the stock. Keep the radish, it gets eaten with the soup.
  9. Pour hot water over the sheet fish cakes so they soften and can be folded. The thicker ones do not need soaking.
  10. Pour the stock into a pot, season with salt and soy sauce, and bring it to a boil.
  11. Cut the longer fish cakes in half.
  12. Fold the softened sheet fish cakes and thread them onto skewers in the classic wavy shape.
  13. Lower the heat and add the fish cake skewers to the broth.
  14. Return the reserved radish to the pot and cook briefly until everything is hot and done.
  15. For the dipping sauce, mix the soy sauce, sugar, Korean chili flakes, chopped garlic, spring onion, a few bird's eye chilies, toasted sesame seeds and sesame oil until combined.
