Viral Thai Milk Bun

  1. Mix the flour, sugar, and milk powder with the yeast, and stir well.
  2. Add the beaten egg and cold milk gradually, stir until combined, then knead with a mixer until the dough is half-formed.
  3. Add the margarine and salt, then mix again until the dough is smooth and elastic (about 7-8 minutes).
  4. Shape the dough into a ball, divide into 18 portions (about 28 g each), then round each portion smooth and place in a foil-lined tray (6 pieces per tray).
  5. Cover with a cloth or plastic wrap and let proof for about 1 hour until doubled in size.
  6. Bake in a preheated oven at 160°C, top and bottom heat, for about 15 minutes until cooked, then remove and let cool.
  7. For the diplomat cream, whisk the egg yolks with the sugar, add the cornstarch and vanilla, stir well, then add the milk gradually while stirring until smooth.
  8. Cook the mixture over medium-low heat while stirring continuously until thick and glossy, lowering the heat once it starts to bubble, then add the butter and stir until glossy. Turn off the heat, press plastic wrap directly onto the surface, and chill in the fridge.
  9. For the whipped cream, beat the whipped cream powder with the cold water on medium speed until stiff.
  10. Beat the chilled diplomat cream again until smooth, then fold in the whipped cream a little at a time while mixing until well combined and smooth.
  11. For the buttercream, beat the margarine/butter with the condensed milk for about 4-5 minutes until fluffy and pale.
  12. Snip open the top of the cooled buns, fill with the diplomat cream using a piping bag, then spread a thin layer of buttercream on top.
  13. Dust lightly with milk powder and powdered sugar, then serve (can be refrigerated for 3-4 days, tastes best served chilled).
