Ingredients

TOPPING :

for the filling:

Steps

  1. Put 1 tsp instant yeast, 1 tsp granulated sugar and 100 ml warm water into a glass, then stir until combined.
  2. Cover the glass and leave it for about 3 to 5 minutes until the yeast rises and foams; if it does not foam the yeast is dead and should not be used.
  3. Put 250 g all-purpose flour, 3 tbsp icing sugar, 2 tbsp milk powder and 2 egg yolks into a bowl.
  4. Pour in the yeast mixture, then stir the dough until evenly combined.
  5. Knead the dough by hand until half smooth; if it feels too dry you may add 1 to 2 tbsp of warm water.
  6. Add a pinch of salt, 1/2 tsp SP emulsifier and 1 tbsp margarine, then knead until the margarine is fully absorbed into the dough.
  7. Shape the dough into a ball, return it to the bowl, cover with plastic wrap or a clean cloth, then leave 40 to 60 minutes until risen.
  8. For the topping, put 60 g icing sugar and 50 g margarine into a bowl, then stir until the texture is smooth.
  9. Add 60 g all-purpose flour, 1 egg white and 1 tsp instant coffee, then stir until evenly combined.
  10. Add 1 tsp mocha paste, stir again until evenly combined, then transfer the topping into a piping bag and set it aside.
  11. Once the bread dough has doubled in size, punch it down and shape it into a ball again.
  12. Divide the dough into portions of about 40 g each, which gives 11 pieces, roll each into a smooth ball, and cover the waiting dough with a clean cloth.
  13. Flatten only the edges of one ball while keeping the centre thick, then pipe in some margarine as the filling.
  14. Seal the dough back into a ball, making sure it is completely closed so the filling does not leak while baking.
  15. Place the buns well apart on a tray greased with margarine; this recipe makes 2 trays with 6 and 5 buns.
  16. Cover the buns with a clean cloth and leave them for about 40 minutes until risen.
  17. Pipe the topping in a circle over each bun.
  18. Bake in a preheated oven at 180 degrees Celsius with top and bottom heat for about 20 minutes, then continue about 5 minutes more so the tops are drier and crisper.
  19. Take the buns out of the oven and let them stand until just warm before serving.
