  1. Combine the mocaf flour, cornstarch, cocoa powder and baking powder as your dry ingredients.
  2. Preheat the oven to 180 to 190 C and prepare a 24 x 24 cm pan lined with paper on the base only.
  3. Separate 3 eggs, the yolks in one bowl and the whites in a scrupulously clean one.
  4. Whisk the egg yolks with the salt, vanilla and about 1 tablespoon of the sugar until pale yellow and slightly thickened.
  5. Add the liquid milk and vegetable oil, then sift the dry ingredients into the yolk mixture.
  6. Stir until it becomes a smooth chocolate paste with no lumps.
  7. Whip the egg whites until foamy.
  8. Add the remaining sugar a little at a time and whip to soft peaks, firm but not broken.
  9. Stir about a quarter of the meringue into the chocolate batter to match the textures.
  10. Add another quarter of the meringue and fold until the batter loosens.
  11. Pour the chocolate batter into the remaining meringue and fold until combined with no lumps.
  12. Pour the batter into the pan and level it with a spatula.
  13. Tap the pan to release the air, then bake for 17 to 19 minutes. The heat is high but the time short, so the sponge does not dry out.
  14. Run a knife around the sides, turn the sponge out, peel off the paper, then cover it so it does not dry out.
  15. For the ganache, melt the dark chocolate with the whipping cream at a ratio of two parts chocolate to one part cream until smooth.
  16. Let the ganache stand until it is no longer hot. It thickens on its own as it cools.
  17. Trim the skin off the top of the sponge so the slices look neater.
  18. Whip the cold whipping cream with the icing sugar and vanilla only until it starts to thicken, never to stiff peaks.
  19. Add about 50 to 60 g of the ganache to the cream and mix on low speed until combined.
  20. Slice the near end of the sponge on a slight diagonal so it rolls more easily.
  21. Spread the chocolate chantilly cream evenly over the whole sponge.
  22. Roll the sponge up slowly using the paper, then press it so the roll is compact.
  23. Chill the roll until it is reasonably firm.
  24. Cover the outside of the cake with a thin layer of the remaining ganache, then chill again for about 10 minutes.
  25. Trim both ends of the cake with a warmed knife for clean cuts.
  26. For the decoration, melt compound chocolate, spread it thinly on non stick baking paper, wait until half set, then roll it around a rolling pin and chill until completely cold, so it snaps into bark like shards.
  27. Press the chocolate shards all over the cake until it is covered like a log.
